I think you might be in a spot where you're moving ahead with details before getting your proportions in place. We've all done it! Getting those proportions in first will help you way more than it might realize at first.
I think you've got some good things going on here! Your lines aren't all scratchy, so you can make a line with a confidence and that's GREAT.
But there are some big differences between your drawing and the refence. The hat on the guy is actually pretty tall, being about the height of the area of his face from the mouth to the top of the visible forehead. You're is very short. And the area between the bridge of his nose and the eye on the left of the photo is small but in your drawing is wider than that space for the right eye.
Putting that shine in the eye in the reward after we've done a lot of the rest of the work. Making sure you do things in order proportions, to blocking in shadow and highlight areas before starting detailing will make you happier with your results and make the time you put into drawing more useful.

I've tried to put into practice everything we've seen so far. I really wanted to draw what I thought when I saw this cat's ninja posture, so there will probably be a lot of mistakes. I started from the rough drawing until I got to the colored design. Any criticism is super appreciated! I think there's something wrong but I don't know what…
It helps me seeing how you worked as you went. I also thought it was great by switching the larger mouse/rat 😉 out and turning them into cartoon characters as well. I think it looks great!

Here is my before and after from the demo, it seems that I really struggle with trying to get the cast shadows right and I overcomplicate the shape by adding to many subtle changes
Looks like we had the same issue on our first attempt using curves instead of lines. Your 2nd attempt is much better!!

Here are my images: my picture of the pear I used and pre pear and post pear from this demo. Definitely looks weird but i think i see improvement. Comments are more than welcome please!! Was thinking I could try using Prokos pear if I should try this project again or if I should move on? Thoughts? Thanks alot
Here is a quick mockup I did in procreate to further illustrate my advice. Hope it helps!
I think what could help is trying to simplify the shadows even more, from what I can see in the reference your darkest shadow should have a shadow around it mimicking the shape. The bit where you did the triangle type shapes could also be simplified and I think it should be your darker midtone
