Here's one tip I believe is KEY to avoid overworking your watercolors, and it has to do with BRUSH MARKS. I find that painting with FEWER brush marks tends to lead to fresher, less overworked results. This is especially true for painting foliage, hair, textures etc... But also true to large shapes of value.
