Tried doing the project again after watching the demo. Definitely better than all the random doodles I've made over the years. Personally feels like I could do a better job matching the shape, and the shadows look a bit off... Would love for some feedback!

Nice, glad to hear you've seen improvement :) it's looking good. I like the shapes you used a the bottom of the pear to indicate that indent in the contour. To me it looks like the core shadow shape is a bit to thin and may be what's feeling off to you. It seems a bit more like a line than a shape.
