Which anatomical features are more important for portrait sculptors to understand: Fat pads or muscles?

Hello @Andrew Joseph Keith, I really enjoy your video, even though these are not sculptures however, These are tracings of people and sculptures with those fat pads. Keep in mind these were based of a different course that I was only focusing on the visible fat pads in the photos. What could I do better next time.

What is a cheek!? I mean...really!
How far back from the bridge of the nose are the eyes in profile? Nobody gives you a measurement for that.
And for that matter what's up with that band of flesh near the bridge of the nose?
How sloped is the female forehead?
These details drive me bonkers.
