The First image is from after I followed the tutorial, and the second image is my first try. Still struggling with having a clear difference between the midtones.

Hey there! I think with the midtones, what would help is starting with a lighter grey after the pure white value. Having less of a difference in between those two steps could help space out the rest of the midtones, so there's more clarity overall. Hope this helps! :)
